Refreshing Hawaiian Chicken Kebabs
Photo Credit: The Toasted Pine Nut
These refreshing chicken kebabs are like a beach party in your mouth or if you are on a tight budget with colorful bell peppers, savory red onion, and juicy pineapple.
- 4 boneless skinless chicken breasts cut into 1” cubes
- 1 large red onion cut into wedges
- 2 cups canned pineapple chunks
- 3-4 red, green, or yellow bell peppers cut into 1” pieces
- ¼ cup pineapple juice
- ¼ cup soy sauce
- 3 tbsp. honey
- ½ tsp. garlic powder
- ¼ tsp. salt
- ¼ tsp. ground black pepper
- 2 tbsp. sesame oil
- 1 tbsp. cornstarch
- ¼ cup of cold water
STEP 1 – Whisk the soy sauce, honey, sesame oil, pineapple juice, ground ginger, garlic powder, salt and pepper together in a small saucepan. Combine the cold water and cornstarch to make a slurry, and slowly add to the marinade mixture, continually stirring for 3-4 minutes until it thickens. Remove from the heat and set aside to cool.
STEP 2 – Toss half the marinade with the chicken in a large Ziploc bag. Seal and refrigerator for up to 4 hours. Reserve the rest of the marinade for basting.
STEP 3 – Soak your wooden skewers in water for at least 30 minutes before threading the chicken. This prevents them from burning. Alternately thread the chicken, vegetables, and fruit on the skewers and place them in a tinfoil tray for transportation.
STEP 4 – At the beach, preheat your grill to medium heat and oil the grates. Grill the kebabs, turning every 4-5 minutes and basting with the reserved marinade until the chicken reaches an internal temperature of 165°F.
