If you enjoy beef, the flank steak marinade will completely blow you off. The mouthwatering aroma of combine spices oozing through the thin layer of well-grilled steak can be tempting even to vegans. I love to prepare the marinade flank steak because of the ability to serve alongside a variety of dishes. Further, the additional touch of herbs such as garlic and rosemary provide the perfect healthy additions to a high-calorie diet.
In this recipe, we will prepare our flank steak on a charcoal grill for the simple fact that; the steak is very thin. Unlike the NY strip steak, which may need high temperatures, the flank steak will cook well under direct charcoal heat.
You will be able to prepare your grilled steak in just three steps. However, it is important to note that the whole process takes time, and you should have at least 3 hours on your hands before you start. You may also marinate your steak and let it sit for about 24 hours before grilling.

Attaining the right grilling temperature is key to achieving a perfect meal. Notably, most people end up with burned out steak due to overheating. On the other hand, if you don’t heat well, your steak may turn out with red spots on the inside. The trick is to ensure that you balance the heat and turn your steak on both sides accordingly.
I will recommend that you get an instant-read thermometer. A good thermometer will help you get accurate readings for your grill and steak as you move along. Personally, I prefer medium-rare. For this steak, you should not cook above 145 degrees F. Although you may still get your flank steak ready even at 160 degrees, it is likely to dry on the outside.
Grilled Marinated Flank Steak
Marinating Time: 2 – 24 hrs
TOTAL Time: 2 hrs 20 mins (Unless you want a longer marinating period)
Preparation Time: 10 minutes
Cooking Time: 30-40 minutes
- 11/2 pound flank steak
- 1/2 cups of olive oil
- 11/2 tsp kosher salt
- 11/2 tsp black pepper
- 1/4 cup of balsamic vinegar
- 1/4 cup of brown sugar
- 2 tbsps of Worcestershire sauce
- 5 minced cloves of garlic
- 1 tsp of crushed red pepper flakes
- 3 sprigs of fresh rosemary.
Step 1: Prepare the marinade
You can prepare the marinade in a bowl and add it to a plastic bag. In my case, I will prepare directly within the gallon zip-top bag.
In a gallon zip-top bag, combine all the ingredients, starting with the olive oil. Zip the bag and thoroughly mix the ingredients. This process will help you prepare your marinade without dirtying more utensils. Once the salt granules are completely dissolved, your marinade should be ready.
Step 2: Marinade Your Flank Steak
Place the whole flank steak into the plastic bag and press out excess air. Seal the bag tightly and try massaging the marinade within the steak.
Once the steak is evenly covered with the marinade, refrigerate it for about 2 hours or more.
Step 3: Cook the Steak On Preheat Grills
Before you remove the steak from the fridge, preheat your grill to 450 degrees F.
Thereafter, grill the flank steak for about 4 minutes on one side then turn on the other. I recommend using the internal thermometer to gauge the cooking of the steak. Once your internal thermometer reads 130- 135 degrees F, the steak should be ready. Grill each side for about 4 minutes, or until the internal thermometer reads 135 degrees F.
Step 4: Serve Your Grilled Flank Steak Marinade
Once the streak is ready, remove it from the heat and let it cool on a plate for about 10 to 15 minutes. Do not be in a hurry to slice, since the cooling period helps soften the steak more.The steak prepared above should serve 4 people. You can serve it alongside classic beef salads, mashed potatoes or any other salad.
Each serving of the steak contains 248 Kcal, 2g carbohydrates, 1 g proteins, 4g fats, 1mg cholesterol, 10mg sodium, and 1g fiber. As you can see from the nutritional profile, the marinade flank steak is very healthy.
Grilling the spicy flank steak marinade should take a bit of your time, but every second is worth the wait. The spicy marinade steak can attain different aromas and flavors depending on the spices used. In this case, we used rosemary sprigs to give it a rosemary aroma. You can use lavender, cumin, paprika or any other spice you deem good in your cooking.
It is also important to note that the steak marinade takes an average of 5 to 7 minutes to cook. If you overcook the steak, you may end up with a dried outer shell that is not as tasty. Therefore, the best way to retain the marinade steak flavor and aroma is to heat accordingly.
As a last note, eating flank steak fresh from the butcher will be tough for your gums and teeth. The reason is the fresh meat is to tough at this stage. You can use a vacuum packaging method or wet aging to tenderize the meat first.
