A knife company doesn’t have to be hundreds of years old, to make a high quality product that chefs, professional and amateur alike, want to use and rave about.
Case in point, Schmidt Brothers Knives. This company is newer to the cutlery industry, and as its name suggests, it was started by two brothers who had a passion for knives, and creating an amazing product for chefs of all skill levels. They also wanted to create a knife that was affordable, while at the same time being unique and attractive.
All Schmidt Brothers knives are made from German high carbon stainless steel. This steel is hard and durable, resists rust and holds its edge well, and at the same time is easy to hone when needed.
The one feature of the Schmidt Brothers knives that we are most drawn to are the handles. The Schmidt Brothers look at their knives as works of art, and the handles are the key to this. Schmidt Brothers knives come with a wide range of handle materials ranging from steel, to a variety of different woods. All of the handles are durable, easy to care for, and make these knives as attractive as they are functional.
In this review, we’ll outline some of the best Schmidt Brothers Knives

How to Choose The Best Schmidt Brothers Knives?
Knife sets are quite diverse. No matter what website or kitchen store you’re looking at, you’ll find that there are an endless variety of knives and knife sets.
The Schmidt Brothers brand is no exception to this observation. In fact, the Schmidt Brothers brand has more variety than other knife brands, so you need to know what you’re looking for, and carefully consider the set you select.
FEATURES TO CONSIDER
Size
Schmidt Brothers knife sets range in size from the two piece carving set, to their largest sets that have 15 pieces including a storage block, steak knives and a sharpener.
Steel
All Schmidt Brothers knives are made from German high carbon stainless steel. We mentioned before that this is a great material because it is quite hard, but not brittle. It holds a sharp edge well, and at the same time is easy to hone and sharpen when needed. This metal is rust-resistant so you don’t have to worry about your knife blades looking old or worn.
Handle
This is really where the decisions get hard with Schmidt Brothers knives. They have a more diverse variety of handle styles and materials than other knife makers. They offer the normal options of polycarbonate, metal and wood. However, each of these options comes in a variety of handle shapes. The wood selection of the Schmidt Brothers knives is awesome. Their wood handles are made from teak, zebra wood, walnut and ash. They come in a variety of finishes to fit the styles of different kitchens and different tastes.
Type of Knife
When shopping for a knife set, do consider the types of knives that you’ll use the most. Smaller sets have fewer knife options, however if you find that you only use a chef’s knife, paring knife and a serrated bread knife, a set of 16 knives may be too much for you.
Care
We would always recommend that you hand wash your knives. Yes, some knives will say that they are dishwasher safe, but this tends to be hard on the blades, and often not great for handles, especially wood handles. While you should consider the care needed, when buying a set of Schmidt Brothers knives, this should be more about the effort necessary to maintain the variety of wood handles that they offer.
Warranty
All Schmidt Brothers Knives come with a limited lifetime warranty. They will replace knives that experience damages that occur outside of the normal use of the knife. Do be aware that the warranty does not apply to the wood handles if they are not cared for in accordance with the care instructions supplied with the knives.

Best Schmidt Brothers Knife (2022 Reviews)
1. Schmidt Brothers® Carbon 6, 15-Piece Knife Set
Why you’ll love this:
Basic, classic and the closest of the Schmidt Brothers lines to the “traditional” looking knife set, the Carbon 6, 15-piece knife set is everything you need in a knife set.
This set features unpolished scorched steel handles that blend seamlessly into the blade. The scorched steel handles are definitely unique and not an option we see from many other knife makers. This is a standout option from Schmidt Brothers and while higher priced than other sets, is worth the money for this unique option.
This set of knives is exceptionally well balanced, and we like the feel of the steel handles. They provide good control and comfort. Even the steak knives were surprisingly well balanced, which was a welcome surprise.
The blades of these knives are the high-quality, German stainless steel that all Schmidt Brothers knives are made from. We like this set the best because the steel handles require minimal care, and are more durable than the wood handles that are offered on other Schmidt Brothers lines.
This set comes with an attractive Acacia wood, magnetic knife block for storing your knives. We like the contrast between the dark knife handles and the light wood of the block. It makes an attractive display to set on your countertop.
Do keep in mind, despite the all metal construction of these knives, they are not dishwasher safe, so follow the care instructions provided so you don’t risk voiding the warranty.
What We Liked
- A very unique style
- The set includes all the essential knives
- Easy to maintain and hold an edge for a long time
- The magnetic knife block is very stylish
What We Didn’t Like
- The metal handles aren’t for everyone
- The included sharpener can be challenging
2. Schmidt Brothers® Bonded Ash, 7-Piece Knife Set
Why you’ll love this:
If you want a knife set that will make a statement sitting on your kitchen counter, then we think that you’ll want to consider the bonded ash line from Schmidt Brothers.
The 7-piece knife set in bonded ash, we think is one of the most attractive options in the Schmidt Brothers lines. The bonded ash handles of these knives are a unique take on the black handles that you find on other brand’s knife sets. The beautiful wood grain of these handles are simply beautiful.
This set features all of the prep knives that you might want in your kitchen, including a bread knife and a 7-inch santoku knife. The magnetic knife block is made with matching wood, and is as nice to look at as the knives are. Though, if you don’t have a ton of counter space, this knife block can be a bit bulky.
Each knife is made from the German high carbon stainless steel that is standard with all Schmidt Brothers knives. We found that all of these knives were well balanced and easy to manage. The handles were comfortable to hold, and we were surprised that they didn’t feel slippery even when our hands were wet.
Like with other wood handled knife sets, this set is not dishwasher safe, so you’ll need to hand wash. Also, follow the care instructions for the handles of this set to maintain the wood finish.
What We Liked
- An ideal set for minimal spaces
- The handles are gorgeous and comfortable
- Blades are sharp out of the box
- Easy to clean and maintain knife block
What We Didn’t Like
- This set does not contain steak knives
- Not dishwasher safe
3. Schmidt Brothers® Bonded Teak, 8″ Chef Knife
Why you’ll love this:
This 8” chef knife from the Bonded Teak line from Schmidt Brothers is a great, all around utility knife for the kitchen. It is well balanced, and full tang. The ergonomic handle is made from bonded teak, which is a beautiful, yet durable wood option. Teak is often used for outdoor patio furniture so you can be confident that the wood handle will stand up to the paces in your kitchen. The end of the handle has an attractive stainless steel cap, which really adds a touch of class to this knife.
If you are shopping for just one great utility knife, this chef knife is a great option. The blade of this chef knife holds its sharpness very well, and doesn’t require frequent honing or sharpening. As far as chefs knives go, this one is a bit on the shorter size, which isn’t great for all chefs. However, it is quite comfortable to use, and worked fine for us in most chopping tasks.
Do keep in mind that though teak is a very durable wood product, it won’t do well in the dishwasher and does require periodic oiling to keep the wood from cracking and losing its finish.
What We Liked
- An ideal work horse for daily use
- The handle is beautiful teal and ergonomically comfy
- Easy to maintain and holds and edge for a very long time
- Great balance throughout
What We Didn’t Like
- It’s not dishwasher safe
4. Schmidt Brothers® Zebra Wood 4-Piece Jumbo Steak Knife Set
Why you’ll love this:
If you want a show stopping set of steak knives to use when entertaining, or if you’re looking for a great gift for your favorite newlyweds, this is the perfect gift to give.
When it comes to steak knives, this set is phenomenal. We love the zebra wood handles, which is a nice mix of lighter color and the bold wood grain. The matching wood storage box is handy for keeping these knives safe, but is also a great way to display your knives.
Despite being steak knives, this set doesn’t lack in quality or comfort. The wood handles feel luxurious in your hand. The knives are well balanced which often isn’t a quality found in steak knives. The slight serration of the blades cut easily through steak and other meats. We didn’t even notice tough sections of meat when we used these steak knives.
Sadly, these knives are not dishwasher safe because of the wood handles. However, we think they are a great product and they’ll look amazing on your table.
What We Liked
- Zebra wood handles thick and comfortable
- The steak knives razor-sharp
- Easy to maintain
- Very nicely balanced
What We Didn’t Like
- This set is not dishwasher safe
- High price
FINAL VERDICT
When it comes to selecting a great knife set, you don’t have to settle for the old fashioned options. Schmidt Brothers are a newer company that is making amazing, high quality knives for a new generation of chefs. Their knives are perfect for the professional chef or the home kitchen. We love the variety of handles that Schmidt Brothers offer, and think that this single detail makes them stand out from the crowd.
